Tomato Cabbage Soup

Ingredients:

  • 1 Pound Cabbage, cored and shredded

  • 1 Onion, chopped

  • 4 Cloves Garlic, peeled and chopped

  • 2 Cups Anything Stock

  • 2 Cups Tomato Sauce

  • 3 Tbsp Camelina Oil

  • 1 Tbsp Honey

  • ½ Cup Roasted Chicken

  • 8 sprigs Thyme, stripped and chopped

  • 1 Tbsp Salt

Tools:

  • Knife

  • Cutting Board

  • Pot with Lid

  • Box Grater (Food Processor with Shredder Attachment)

  • Spoon

  • Mason Jar

How to:

  • Heat large Pot and add Oil. Once it shines, add Onion, Garlic, Salt, and Thyme, then sweat until translucent.

  • Add Cabbage and cook until soft.

  • Add Tomato Sauce and bring to a simmer.

  • Then add Stock, Honey, and Chicken and bring to a simmer.

Storage:

  • Store in airtight container in refrigerator for up to 1 week

Bonus!

  • Add extra Vegetables in place of Chicken for a vegetarian soup.

  • Add some cooked grain like Farro.

  • Use different Herbs that are on hand.
