Gather Ingredients and Tools, then prep Ingredients as indicated.
In a bowl mash strawberries into a mash and transfer to a pot, add Honey and Salt.
Bring to a boil and and stir often until mixtures reaches 220℉, then reduce by ¼ volume. Make sure to stir continuously so jam doesn't burn.
Transfer to mason jars to cool.
Try adding Herbs to add flavor.
Try mixing available Berries to create a blend.
When available in the PNW, use lemons! Add ¼ Cup Lemon Juice and 1 Tbsp Lemon Zest along with other Ingredients.
2 pounds Strawberries, stemmed and cored
2 ½ Cups Honey
2 tsp Salt
Airtight Container for up to 7 days in the Fridge or 6 Months in the Freezer.
