Ingredients:

4 Cups Sweet Potato peeled and cubed ½”pieces

1 Red onion ¼” slices

4 Cloves Garlic, peeled, chopped

3 Tbsp Fat

2 tsp salt

½ tsp salt

Tools:

  • Knife

  • Cutting Board

  • Peeler

  • Bowl

  • Half Sheet Tray

  • Parchment Paper

  • Airtight Container

How to:

  • Preheat over to 400F°

  • Put sweet potato, onion and garlic in bowl and toss with fat

  • Then toss with salt and pepper and place on a parchment lined sheet tray

  • Done when fork tender and caramelized roughly 30 min

  • Place in an airtight container in the refrigerator for 5 days

Bonus!

  • Add squash or other root vegetable

  • Try different herbs or even spices

  • Toss with a little Red Wine Vinegar
