Gather Ingredients and Tools, then prep Ingredients as indicated.
Place Eggs, Onions, Arugula, Mustard, Mayonnaise, and Salt in a Bowl and mix thoroughly.
Add Apple Cider Vinegar to taste.
If more Salt is necessary, add to your liking.
8 Hard Boiled Eggs, chopped
1/2 Cup Mayonnaise
1 Handful Arugula, rinsed, rough chopped
1 Tbsp Pickled Red Onion
1 Tbsp Mustard
2 tsp Apple Cider Vinegar
½ tsp Salt
Airtight Container in Refrigerator for up to 5 days.
