Cauliflower and Broccoli Casserole

2 Cups Broccoli, cut into florets
2 Cups Cauliflower, cut into florets
½ Cup Mayonnaise
½ Cup Onion, chopped
1 Cup (specific) Cheese, shredded
½ cup Butter, melted
½ Tbsp Salt
Pot with Lid
Preheat oven to 350F°.
In a Pot bring water to a boil. Blanch Broccoli and Cauliflower separately, until tender. Place Blanched Vegetables in a Baking Dish.
In a Bowl, beat Eggs until creamy, then add Mayonnaise, Salt, Onion, and ½ the Cheese. Pour over Vegetables.
Melted Butter and pour over the top, then add the rest of the Cheese.
Bake until bubbly and golden, roughly 40 minutes.
Leftovers will last up to 5 days in an airtight container in the fridge.
Add other Vegetables that you have on hand or prefer.
Try different Cheeses.
Add fresh Herbs or Spices to boost flavors.
