¼ Cup Bacon, chopped
¼ Cup Onion, chopped
¼ Cup Cheese, shredded
1 Tbsp Garlic, minced
1 Tbsp Butter
1 Tbsp Camelina Oil
1 tsp Salt
Crack Eggs into a bowl and whisk together.
Heat Skillet on medium, add Camelina Oil, and heat for 10 seconds.
Add Onion to Skillet and cook until translucent.
Add Garlic and Bacon and sweat some more.
Add Butter and melt. Once Butter starts to brown a little, add Salt and turn heat to low.
Whisk Eggs again, then add to the Pan and with a spatula slowly mix in the Eggs and continue mixing as Eggs cook.
Once the Eggs are 80% done, add the Cheese so it starts melt and keep mixing so the Cheese is incorporated.
Place in an airtight container in the fridge for up to 24 hours.
Add other vegetables (cook with the Onions).
Try different types of Cheese.
Add leftover Roast Chicken.
Add seasonal Herbs.
Scrambles are a good way to use up any leftover Roasted Root Vegetables or Roasted Potatoes (or any cooked veg) that you have in the fridge.
